釀造：堅持手工採收，兩次嚴格選果，80%的除梗後，進行4~5天的低溫冷浸泡，之後導入控溫槽中，幫助原生酵母啟動發酵，再換置於小橡木桶中進行18~20個月的長期培養。新桶比例特級園約50%，一級園約30%，其餘都為舊桶，並且在裝瓶前的一個月，會再進行一次過桶，以天然方式進行過濾沉澱。
